Twice baked potatoes are a delicious and satisfying side dish. They are creamy, cheesy, and packed with flavor.
Ingredients:
- 4 large russet potatoes
- 1/2 cup sour cream
- 1/4 cup butter
- 1/4 cup milk
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 green onions, chopped
- Salt and pepper to taste
Instructions:
Preheat oven to 375F 190C
Scrub potatoes and pierce with a fork
Bake for 45-60 minutes or until tender
Cut potatoes in half lengthwise and scoop out the insides, leaving a thin shell
In a bowl, mash the potato flesh with sour cream, butter, and milk until smooth
Stir in 3/4 cup of cheddar cheese, crumbled bacon, and chopped green onions
Season with salt and pepper
Stuff the potato mixture back into the potato shells
Sprinkle remaining cheddar cheese on top
Bake for an additional 15-20 minutes or until heated through and cheese is melted and bubbly
Garnish with additional green onions and bacon if desired before serving
