Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
- 1 cup fresh strawberries, finely chopped
Instructions:
Warm up the oven to 350F 175C and put paper liners in a cupcake pan
Mix the flour, baking powder, and salt together in a bowl with a whisk
Put away
Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy
One at a time, add the eggs and beat well after each one
Add the vanilla extract and mix well
Add the dry flour mixture to the wet ingredients slowly, mixing in the milk every so often
Start and end with the dry mix
Dont mix any further than that
Add the chopped fresh strawberries slowly and carefully
Fill each cupcake liner about two thirds of the way to the top with batter
After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
After taking the cupcakes out of the oven, let them cool in the pan for a few minutes
Then, move them to a wire rack to finish cooling
Make the Fresh Strawberry Buttercream while the cupcakes cool
For the strawberry buttercream that is brand new: Things used: 1/2 cup softened unsalted butter 2 cups of sugar powder - 1/2 cup fresh strawberries, mashed and strained Steps: Soften the butter and beat it in a bowl until its smooth
Add the powdered sugar slowly and beat until everything is well mixed and fluffy
Slowly pour in the fresh strawberry puree that has been strained
Keep beating the frosting until it is smooth and pink
Use a piping bag or a spatula to frost the cupcakes with the Fresh Strawberry Buttercream once they are completely cool
