Ingredients:
- 1 box yellow cake mix
- 1 can 15 oz pumpkin puree
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon pumpkin spice
- 1 package instant vanilla pudding mix
- 2 cups cold milk
- 2 cups whipped cream
- 1/2 cup crushed graham crackers for garnish
Instructions:
Preheat oven to 350F 175C and grease a 9x13 inch baking pan
In a large bowl, mix yellow cake mix, pumpkin puree, water, vegetable oil, eggs, and pumpkin spice until well combined
Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean
Allow the cake to cool completely, then cut it into small cubes
In a separate bowl, whisk together instant vanilla pudding mix and cold milk until thickened
In serving glasses or bowls, layer the pumpkin cake cubes, vanilla pudding, and whipped cream
Repeat the layers until the glass or bowl is filled, ending with a dollop of whipped cream on top
Sprinkle crushed graham crackers on the top for garnish
Chill in the refrigerator for at least 2 hours before serving
