Chocolate Blackberry Cupcakes with Cream Cheese and Caramel

Indulge in the perfect combination of rich chocolate cupcakes, tart blackberries, creamy cream cheese frosting, and luscious caramel sauce. These cupcakes are a delightful treat for any occasion.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup blackberries, fresh or frozen
  • 8 oz cream cheese, softened
  • 1/4 cup caramel sauce
  • Additional blackberries and caramel sauce for garnish

Instructions:

Preheat your oven to 350F 175C and line a muffin tin with cupcake liners

In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt

Set aside

In another bowl, cream together the softened butter and granulated sugar until light and fluffy

Add the eggs, one at a time, beating well after each addition

Stir in the vanilla extract

Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, starting and ending with the dry mixture

Mix until just combined

Gently fold in the blackberries into the cupcake batter

Divide the batter evenly among the cupcake liners, filling each about 2/3 full

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean

Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely

While the cupcakes are cooling, prepare the cream cheese frosting by beating the softened cream cheese until smooth and creamy

Add the caramel sauce and mix until well combined

Once the cupcakes are completely cool, frost them with the cream cheese and caramel frosting

Garnish each cupcake with a blackberry and a drizzle of caramel sauce
