Easy Red Velvet Cupcakes

These simple red velvet cupcakes are a classic treat that taste a bit like cocoa and are bright red. Perfect for any event

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 tsp vanilla extract
  • 1 tsp white vinegar
  • 2 tbsp red food coloring

Instructions:

Preheat your oven to 350F 175C and line a cupcake pan with paper liners

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder

In a separate bowl, beat the eggs and then add in the vegetable oil, buttermilk, vanilla extract, and white vinegar

Mix until well combined

Slowly pour the wet ingredients into the dry ingredients while stirring

Mix until the batter is smooth and there are no lumps

Add in the red food coloring and mix until the batter turns a vibrant red color

Fill each cupcake liner about 2/3 full with the batter

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean

Remove the cupcakes from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely

Once the cupcakes are cool, you can frost them with your favorite cream cheese frosting or any desired frosting of your choice

Decorate with sprinkles or other toppings if desired
