This hearty soup is full of different vegetables and is great for a cozy meal on a cold day.
Ingredients:
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 potatoes, diced
- 1 can 14 oz diced tomatoes
- 4 cups vegetable broth
- 1 cup green beans, trimmed and chopped
- 1 cup corn kernels
- 1 cup peas
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
Add the onion, carrots, and celery to a large pot and cook them until they become soft
Garlic, thyme, oregano, green beans, corn, peas, and vegetable broth should all be added
Bring to a boil, then lower the heat and let it cook for 20 to 25 minutes, until the vegetables are soft
Add pepper and salt to taste
Warm up and serve
