These Pumpkin Paleo Pancakes are a delicious and healthy breakfast option. Theyre gluten-free, dairy-free, and packed with the flavors of pumpkin pie spice. Perfect for a cozy fall morning

Ingredients:

  • 1 cup pumpkin puree
  • 3 eggs
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tbsp maple syrup optional
  • Coconut oil or ghee for cooking

Instructions:

Put the eggs, vanilla extract, and pumpkin puree in a bowl and mix them together

Mix pumpkin pie spice, baking soda, salt, almond flour, and coconut flour together in a different bowl

Slowly add the dry ingredients to the wet ones and mix them together until they are well mixed

You can add maple syrup to the batter to make the pancakes sweeter

Put the pan or griddle over medium-high heat and add a little coconut oil or ghee to keep the food from sticking

For every pancake, pour 1/4 cup of the batter onto the pan

Once the top starts to bubble, flip it over and cook the other side until its golden brown

Add more oil or ghee to the pan as needed and do it again with the rest of the batter
