Enjoy a lighter version of seafood chowder with this Skinny Ms. recipe. Packed with flavor and wholesome ingredients, its perfect for any day of the week.
Ingredients:
- 1 lb seafood mix shrimp, scallops, and/or fish chunks
- 3 cups vegetable broth
- 1 cup diced potatoes
- 1 cup diced carrots
- 1 cup diced celery
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 cup low-fat milk
- 2 tablespoons cornstarch
- Salt to taste
Instructions:
Add vegetable broth, potatoes, carrots, celery, onion, garlic, thyme, and black pepper to the slow cooker
Then add the seafood mix
Put the lid on and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the seafood is done and the vegetables are soft
Mix low-fat milk and cornstarch together in a small bowl with a whisk until the mixture is smooth
This is the last 30 minutes of cooking
Stir the milk mixture into the slow cooker
Before you serve, add salt to taste
