Zucchini Noodles with Pesto Sauce

People often eat zucchini noodles, which are also called zoodles, instead of pasta because they are low in carbs. This dish is full of flavor and still keto-friendly thanks to the pesto sauce that is made with fresh basil, Parmesan cheese, and pine nuts.

Ingredients:

  • 2 medium zucchinis, spiralized
  • 1/2 cup fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions:

Put basil, Parmesan cheese, pine nuts, garlic, and olive oil in a food processor and blend them together

To make the pesto sauce, blend the ingredients together until they are smooth

Place the pan on medium heat

Put in the spiralized zucchini noodles and cook for two to three minutes, until they are just barely soft

Toss the zucchini noodles in the pesto sauce in the pan until they are well covered

Add pepper and salt to taste

If you want, you can serve it hot with extra Parmesan cheese and basil leaves on top
