Black Bean Tostadas with Avocado Salad

A tasty and healthy Mexican-style dish is black bean tostadas with avocado salad. Cumin and chili powder are added to the black beans to make a flavorful base for the tostadas. The avocado salad with fresh tomatoes, red onion, and cilantro is a nice change of pace. You can make these tostadas quickly and they will fill you up.

Ingredients:

  • 1 can 15 oz black beans, drained and rinsed
  • 1 teaspoon olive oil
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 tostada shells
  • 2 avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1/4 cup sour cream
  • 1/4 cup shredded cheddar cheese
  • Hot sauce optional

Instructions:

Put the olive oil in a pan and heat it over medium-low heat

It will take about three minutes of cooking after adding the chopped onion until it turns clear

Add the ground cumin, chili powder, and minced garlic and mix them in

For another one to two minutes, until it smells good

Put the black beans in the pan and use a fork to slightly mash them until they are warm all the way through

Add pepper and salt to taste

Put the diced avocados, cherry tomatoes, sliced red onion, and chopped cilantro in a bowl

Squeeze lime juice over the mix and toss it together gently

Spread some of the black bean mixture on top of each tostada shell to put them together

Put the avocado salad mix on top of the beans

Put some sour cream on top of each tostada and then top with cheddar cheese shreds

Put a little hot sauce on top if you like it spicy

Serve right away and enjoy
