Ingredients:
- 1 lb boneless, skinless chicken breast, diced
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz pinto beans, drained and rinsed
- 1 can 14
- 5 oz diced tomatoes
- 1 cup corn kernels
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 jalapeo, finely chopped optional for heat
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon paprika
- 1 teaspoon oregano
- Salt and pepper to taste
- 2 cups chicken broth
- 2 tablespoons olive oil
- Fresh cilantro and shredded cheese for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add diced chicken and cook until browned on all sides
Add chopped onion, garlic, bell pepper, and jalapeo
Saut until vegetables are softened
Stir in chili powder, cumin, paprika, oregano, salt, and pepper
Mix well
Pour in diced tomatoes, black beans, kidney beans, pinto beans, corn, and chicken broth
Bring the chili to a boil, then reduce heat to simmer
Cover and let it simmer for 30-40 minutes
Adjust seasoning if needed
Serve hot, garnished with fresh cilantro and shredded cheese
