Easy Baked Paleo Chicken Tenders

Enjoy these Easy Baked Paleo Chicken Tenders as a delicious gluten-free and dairy-free alternative to traditional chicken tenders. Theyre crispy on the outside and tender on the inside, perfect for a healthy and satisfying meal.

Ingredients:

  • 1 lb boneless, skinless chicken tenders
  • 1 cup almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons coconut milk
  • Cooking spray coconut oil or olive oil

Instructions:

Warm your oven up to 400F 200C and put parchment paper on a baking sheet

Mix paprika, garlic powder, onion powder, salt, and black pepper with the shredded coconut in a shallow bowl

Combine well

Whisk the eggs and coconut milk together in a different bowl until they are well mixed

Let any extra egg mixture drip off each chicken tender as you dip it in it

Then, coat it with the almond flour mixture and press it onto the chicken to make it stick

Spread the chicken tenders out on the baking sheet that has been prepared

Spray cooking spray on the chicken tenders just enough to help them brown in the oven

The chicken should be cooked all the way through after 20 to 25 minutes in the oven

The coating should be golden brown and crispy

Serve hot with the sauce of your choice
