Ingredients:
- 200g dark chocolate
- 250g unsalted butter
- 300g golden caster sugar
- 4 large free-range eggs
- 200g plain flour
- 1 teaspoon baking powder
- 75g cocoa powder
- 100g dried sour cherries
- 100g pecans, roughly chopped
Instructions:
Preheat the oven to 180C/350F/gas 4
Grease and line a 20cm square baking tin
Break the chocolate into a heatproof bowl and melt it over a pan of gently simmering water, making sure the bowl doesnt touch the water
In a separate pan, melt the butter and then stir in the melted chocolate
In a large mixing bowl, beat the sugar and eggs until light and fluffy
Fold in the chocolate and butter mixture
Sift in the flour, baking powder, and cocoa powder, and gently fold until just combined
Fold in the sour cherries and chopped pecans
Pour the mixture into the prepared tin, spreading it out evenly
Bake in the preheated oven for 25 to 30 minutes, or until the brownies are cooked on the outside but still gooey in the middle
Allow to cool in the tin, then transfer to a wire rack to cool completely before cutting into squares
