Wolffer Estates Rosé Poached Pear Salad

Ripe pears are poached in Wolffer Estates Ros wine to make this elegant salad. The wine gives the pears a light sweetness that goes well with the tangy goat cheese and crunchy walnuts. It has just the right amount of flavors and textures to be a starter or light main course for any event.

Ingredients:

  • 4 firm pears, peeled and cored
  • 1 bottle of Wolffer Estates Ros wine
  • 1 cup sugar
  • 1 cinnamon stick
  • 4 cups mixed salad greens
  • 1/2 cup crumbled goat cheese
  • 1/4 cup chopped walnuts
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

In a large saucepan, combine the Wolffer Estates Ros wine, sugar, and cinnamon stick

Bring to a simmer over medium heat

Add the peeled and cored pears to the simmering liquid

Cook for about 15-20 minutes, or until the pears are tender but still firm

Remove the pears from the liquid and allow them to cool

Meanwhile, in a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper to make the dressing

Arrange the mixed salad greens on serving plates

Slice the cooled poached pears and place them on top of the salad greens

Sprinkle the crumbled goat cheese and chopped walnuts over the salads

Drizzle the balsamic dressing over the salads

Serve immediately and enjoy
