Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and finely chopped
  • Vegetable oil for greasing the muffin tin
  • 1/2 cup powdered sugar for coating
  • 1/2 tsp ground cinnamon for coating

Instructions:

Set the oven temperature to 175C 350F

Use non-stick cooking spray or vegetable oil to grease a muffin pan

Mix the flour, baking powder, granulated sugar, salt, ground nutmeg, and cinnamon in a big bowl

Combine the melted butter, milk, egg, and vanilla extract in a different bowl

Mixing until just combined, pour the wet ingredients into the dry ingredients

Fold the diced apples gently into the batter

Spoon or use a small scoop to fill each muffin cup about two thirds of the way

When a toothpick is inserted into the center of a popper, it should come out clean after 15 to 18 minutes of baking in a preheated oven

As the poppers bake, prepare the coating by combining the powdered sugar and ground cinnamon in a bowl

After cooking, take the poppers out of the muffin tin and allow them to cool slightly

Roll each popper in the mixture of powdered sugar and cinnamon while its still warm, making sure to coat it evenly

Enjoy the warm apple poppers after serving
