Ingredients:
- 1 cup canned pumpkin puree
- 2 large eggs
- 1/2 cup almond butter
- 1/4 cup honey
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/4 tsp allspice
- 1/4 tsp salt
- 1/3 cup chocolate chips optional
- 1/4 cup chopped nuts optional
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with paper liners
In a mixing bowl, combine the pumpkin puree, eggs, almond butter, honey, and vanilla extract
Mix until well combined
Add the baking soda, baking powder, cinnamon, nutmeg, cloves, allspice, and salt to the mixture
Stir until the batter is smooth
If desired, fold in chocolate chips and chopped nuts for extra flavor and texture
Divide the batter evenly among the muffin cups in the tin
