This instant peach ice cream recipe makes a creamy treat that doesnt have any dairy. Its made with coconut milk and ripe peaches, and its very sweet and great for hot summer days. You dont need an ice cream maker
Ingredients:
- 4 ripe peaches, peeled and diced
- 2-3 tablespoons maple syrup or agave nectar
- 1 can 13
- 5 oz full-fat coconut milk, chilled in the fridge overnight
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions:
Place diced peaches in a blender or food processor
Add maple syrup or agave nectar, vanilla extract, and salt to the blender
Scoop the solid coconut cream from the top of the chilled coconut milk can and add it to the blender
Blend until smooth and creamy, scraping down the sides as needed
Taste and adjust sweetness if necessary by adding more maple syrup or agave nectar
Transfer the mixture to a shallow container and freeze for about 3-4 hours, or until firm
Once firm, scoop the ice cream into bowls and serve immediately
