Ingredients:
- 1 cup peanut butter
- 1/2 cup powdered sugar
- 1/4 cup unsalted butter
- 1/4 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1/2 cup crushed peanut butter cups
Instructions:
Put parchment paper around the edges of a small baking pan, leaving some overhang to make it easy to take off
Put peanut butter, powdered sugar, and unsalted butter in a bowl that can go in the microwave
For 20 seconds at a time, stir the mixture in the microwave until it is all melted and smooth
Add the vanilla extract and mix well
Spread out half of the peanut butter mixture in the baking pan that has been prepared
While you make the chocolate layer, put it in the freezer to set
To melt the chocolate chips in a different bowl that can go in the microwave, stir them every 20 seconds for about a minute
Spread out the melted chocolate on top of the peanut butter layer in the pan
On top of the chocolate layer, sprinkle the peanut butter cups that have been broken up
If you need to soften the rest of the peanut butter mixture, put it in the microwave for a few seconds
Spread or drizzle it on top of the peanut butter cups
Re-freeze the pan and let it set for at least one to two hours
When the fudge is set, use the extra parchment paper to lift it out and set it on a cutting board
Cut the fudge into squares that are easy to eat
