Ingredients:
- 4 boneless, skinless chicken breasts
- 4 jalapeno peppers, halved and seeded
- 1 cup cream cheese
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions:
Preheat Bradley Smoker to 225F 107C using hickory or mesquite wood bisquettes
Season chicken breasts with salt, pepper, and paprika
Fill each jalapeno half with cream cheese and place one on top of each chicken breast
In a bowl, mix together sour cream, shredded cheddar cheese, and minced garlic
Place chicken breasts in the smoker and smoke for about 1
5 hours or until internal temperature reaches 165F 74C
During the last 15 minutes of smoking, spread the sour cream mixture over the chicken breasts
Remove chicken from the smoker and let it rest for a few minutes before serving
Slice and serve hot, garnished with fresh cilantro if desired
