Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 cup unsalted butter, softened
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup finely chopped pecans
- Confectioners sugar, for dusting
Instructions:
Melt the butter and mix it with the sugar in a bowl until the mixture is light and fluffy
Mix in the vanilla extract until its well mixed in
Add the flour and salt slowly while mixing the ingredients together until a dough forms
Make sure the chopped pecans are spread out evenly in the dough before you fold them in
Put the dough in the fridge for at least 30 minutes after making a disc out of it
Warm the oven up to 350F 175C and put parchment paper on a baking sheet
On a floured surface, roll out the chilled dough until it is about 1/4 inch thick
Cut out cookies in the shape of coins with a round cookie cutter and place them on the baking sheet that has been prepared
After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden
After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down
Once the cookies are completely cool, use confectioners sugar to make them look like silver coins
