Lightened Up Cinnamon Bun Scones

These scones are a healthier take on classic cinnamon buns. They are lightened up with whole wheat flour and topped with a sweet honey drizzle. Perfect for a cozy breakfast or brunch

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cubed
  • 2/3 cup low-fat buttermilk
  • 1/2 teaspoon vanilla extract
  • 1/4 cup raisins
  • 2 tablespoons chopped pecans
  • 1 tablespoon honey

Instructions:

Warm your oven up to 425F 220C and put parchment paper on a baking sheet

All-purpose flour, whole wheat flour, sugar, baking powder, salt, and ground cinnamon should all be mixed together in a large bowl using a whisk

Add the cold butter cubes to the dry ingredients

Cut the butter into the flour mixture with a pastry cutter or your fingers until it looks like big crumbs

Once the dough starts to form, add the buttermilk and vanilla extract and mix well

Add the chopped pecans and raisins slowly

On a floured surface, move the dough around a few times until it comes together

Cut the dough into 8 wedges after rolling it into a circle that is about an inch thick

Leave some space between the wedges when you put them on the baking sheet that has been prepared

After the oven is hot, bake the scones for 12 to 15 minutes, or until they are golden brown and fully cooked

Use the microwave to warm the honey for about 15 seconds, until it turns into a liquid while the scones are baking

Spread the honey over the warm scones as soon as they come out of the oven

Wait a minute or two before serving the scones
